Lasagna is one of those classic Italian dishes that feels like a warm hug on a plate. With its layers of hearty pasta, rich meat sauce, creamy béchamel, and gooey cheese, it’s no wonder this dish has made its way into the hearts (and stomachs) of many around the world. While store-bought versions can be convenient, there’s something incredibly satisfying about making lasagna from scratch. Plus, it fills your home with an aroma that is simply irresistible!
In this blog post, I’ll walk you through my beloved homemade lasagna recipe, step by step. Get ready to create a comforting and delicious meal that will impress your family and friends!
Ingredients
For the Meat Sauce:
- 1 lb (450g) ground beef or Italian sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 tsp sugar (optional, to balance acidity)
- 1 tbsp olive oil
For the Béchamel Sauce:
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 4 cups whole milk
- 1/4 tsp nutmeg (optional)
- Salt and pepper to taste
For Assembly:
- 9-12 lasagna noodles (either no-boil or standard)
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
Step 1: Prepare the Meat Sauce
- Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, around 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
- Brown the Meat: Add the ground beef or sausage to the pot. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Add the Tomato Sauce: Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, pepper, and sugar (if using). Bring the mixture to a simmer and let it cook for about 30 minutes, stirring occasionally, to let the flavors meld.
Step 2: Make the Béchamel Sauce
- Melt Butter: In a separate saucepan, melt the butter over medium heat.
- Whisk in Flour: Once the butter is melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly, until it becomes a paste (roux).
- Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, whisking constantly, until the sauce thickens (about 5-7 minutes).
- Season: Season with salt, pepper, and nutmeg (if using). Remove from heat.
Step 3: Cook the Lasagna Noodles
If you’re using standard lasagna noodles, cook them according to the package instructions until al dente, and then drain and rinse with cold water to stop the cooking process. If using no-boil noodles, you can skip this step!
Step 4: Assemble the Lasagna
- Layering: Preheat your oven to 375°F (190°C). In a large baking dish, start with a thin layer of meat sauce on the bottom.
- First Layer of Noodles: Place a layer of lasagna noodles over the meat sauce.
- More Sauce: Spread a layer of the meat sauce over the noodles, followed by a layer of béchamel sauce.
- Add Cheese: Sprinkle a portion of shredded mozzarella cheese on top.
- Repeat: Repeat the layering process—noodles, meat sauce, béchamel, and mozzarella—until all ingredients are used, finishing with a top layer of béchamel and a generous sprinkle of mozzarella and grated Parmesan cheese.
Step 5: Bake
Cover the baking dish with aluminum foil (to prevent it from browning too quickly) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.
Step 6: Cool and Serve
Remove the lasagna from the oven and allow it to cool for about 15-20 minutes before slicing. This cooling time helps the layers set and makes it easier to serve. Garnish with fresh basil or parsley if desired.
Making homemade lasagna may take a bit of time and effort, but it’s completely worth it. Each layer of gooey cheese, savory meat sauce, and creamy béchamel combines to create a dish that’s pure comfort food. Whether you’re serving it for a family dinner, a special occasion, or just because, this homemade lasagna will undoubtedly be a crowd-pleaser.
Enjoy this delicious meal with a green salad and some crusty bread, and you’ve got yourself a delightful feast! Happy cooking!
